NOTE DI VINIFICAZIONE
Raccolta in piccole cassette con selezione manuale in vigna. Due passaggi di
raccolta: le uve vengono diraspate, pigiate e pressate delicatamente a bassa pres-
sione. Sedimentazione naturale durante la notte in vasche d‘acciaio, fermenta-
zione spontanea al 100% in Tonneaux. Invecchiamento su lievito grezzo per un
anno, imbottigliamento ad dicembre 2020.
NOTE DI DEGUSTAZIONE
Colore giallo paglierino intenso, delicate note di frutta che ricordano l‘uva
spina, la salvia e il sambuco con sottili aromi di legno di sottofondo. Spiccata,
vivace e persistente mineralità
